We sweeten our chocolate with unrefined organic coconut sugar. Coconut sugar is a healthy, low glycemic sweetener that offers sustained, balanced energy without the spike and crash of refined white sugar. It's rich in magnesium, calcium, potassium, zinc, iron, and supports blood sugar stability. It has a delicious sweet and caramelly taste, and creates a beautiful, rich flavor profile when paired with our Ucayali River Peruvian cacao.  

Coconut sugar comes from the flower blossoms of the coconut palm tree. When the flowers are cut, the blossoms release a sweet, silky sap, reminiscent of the sap from a maple tree. The nectar is captured, dehydrated, and poured over trays in a thin layer to crystalize. The result is unrefined coconut sugar, a true whole food sweetener.
